A pumpkin spice drink for the small trick-or-treaters, with no coffee in it at all. Real pumpkin, maple syrup, and warm spice, frothed and topped with cream.
Ingredients
- 4 cups whole milk (or oat milk)
- 1/3 cup pumpkin puree
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- Whipped cream and a pinch of cinnamon
Instructions
- Whisk the pumpkin puree, maple syrup, and spice into the cold milk in a saucepan.
- Heat over medium-low, whisking often, until steaming and frothy — about 6 minutes.
- Stir in the vanilla off the heat.
- Whisk hard for 20 seconds to build foam, then pour into mugs.
- Top with whipped cream and a pinch of cinnamon.
Why it works & making it ahead
Whisk the pumpkin into the cold milk before any heat goes under the pan or it will sit in lumps. Twenty seconds of hard whisking off the heat gives you café-style foam without a machine. Oat milk froths just as well for a dairy-free version.
