The easiest showpiece on the dessert table. Fudgy dark-chocolate brownies, a spiral of melted white chocolate, and one drag of a toothpick from the centre outward — that is the whole trick.

Ingredients

  • 1 cup butter
  • 8 oz dark chocolate, chopped
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar
  • 4 eggs
  • 2 teaspoons vanilla
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 4 oz white chocolate, for the webs

Instructions

  1. Heat oven to 350°F (175°C) and line a 9x13 pan with parchment.
  2. Melt the butter and dark chocolate together, then whisk in both sugars.
  3. Beat in the eggs one at a time, then the vanilla, until glossy.
  4. Fold in the flour, cocoa, and salt — stop the moment the streaks vanish.
  5. Bake 28–32 minutes, until the center is just set. Cool completely in the pan.
  6. Melt the white chocolate and pipe concentric circles over the surface, then drag a toothpick from the center outward to pull the web into shape.

Why it works & making it ahead

Pipe the spiral while the brownies are completely cool but the white chocolate is still warm and loose; drag straight out from the centre in eight even strokes. Pull the pan when the middle is only just set — brownies firm as they cool. They cut cleanest on day two with a hot dry knife.
