A whole candied apple is a beautiful thing that nobody can actually eat. Cut the apples into wedges first and you get the same glossy red shatter in a size a child can finish before the candy softens.
Ingredients
- 3 large apples, cored and sliced into wedges
- 2 cups granulated sugar
- 1/2 cup light corn syrup
- 3/4 cup water
- 1 teaspoon cinnamon
- 1/2 teaspoon red food coloring (optional)
- Popsicle sticks
Instructions
- Insert a popsicle stick into the skin side of each apple wedge.
- Line a baking sheet with parchment and lightly grease it.
- In a saucepan, combine sugar, corn syrup, water, and cinnamon. Heat over medium-high until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
- Remove from heat. Stir in food coloring if using.
- Dip each apple wedge into the hot candy, letting excess drip off. Place on the prepared sheet.
- Allow to cool and harden completely before serving.
Why it works & making it ahead
A candy thermometer is not optional here: below 300°F the coating stays tacky, above it turns bitter. Dry the apple wedges thoroughly before dipping or the candy will slide off. Dip within an hour of serving — the fruit's moisture softens the shell overnight.
