The appetizer that empties the platter before the punch is poured. Sausage meat rolled in puff pastry, three shallow knuckle lines scored across the back, and a sliced almond pressed on for a nail.

Instructions

  1. Preheat oven to 400°F (200°C). Line two sheets with parchment.
  2. Mix the sausage meat with the grated onion, sage, and pepper.
  3. Roll the sausage into finger-length logs and wrap each in a strip of puff pastry, sealing the seam underneath.
  4. Score three shallow knuckle lines across the back of each finger with the back of a knife — shallow, or they split open.
  5. Brush with beaten egg and press an almond slice onto one end for a nail.
  6. Bake 22 to 25 minutes until deep gold and cooked through. Dab ketchup under each nail just before serving.

Why it works & making it ahead

Score the knuckles shallow — cut too deep and the pastry splits open in the oven. Seal the seam underneath so nothing unrolls. Wrap them in the morning, keep them covered in the fridge, and bake as guests arrive; the ketchup goes under the nail at the last second.
